Recipe Ingredients for Austin Millet and Vegetable Gratin

8 oz millet
24 oz water
8 spring onions
4 small zucchini
4 stalk celery
4 tsp vegetable oil
8 oz mushrooms
12 oz sweetcorn (cooked)
1 oz lemon rind
4 tsp margarine
8 tsp whole wheat flour
12 oz soy milk

Recipe Directions for Austin Millet and Vegetable Gratin

  1. Dry-roast the millet briefly in a heavy-bottomed pan until there is a slightly toasted smell to it, add water and pinch of seas salt.

  2. Cover and bring to a boil.

  3. Leave on low heat for 15-20 minutes.

  4. Chop the spring onions, zucchini, and celery finely.

  5. Sauté the vegetables.

  6. Chop the mushrooms finely and sauté a little longer.

  7. Stir in the sweetcorn.

  8. Remove the vegetables from the heat and add lemon rind and seasoning.

  9. Make a roux using the flour, margarine, and soy milk.

  10. Mix together the millet and vegetables and sauce.

  11. Bake at 350 for about 20 minutes or put in microwave for about 2 minutes.
