Recipe Ingredients for AUSTIN Greens over pasta

1 lb broccoli rabe
1/2 lb collard greens
1 tsp salt
2 T extra-virgin olive oil
4 garlic cloves, minced
4 oz mushrooms
1 tbsp nutritional yeast flakes
1 tsp hot red pepper flakes
5 oz whole wheat pasta

Recipe Directions for AUSTIN Greens over pasta

  1. Clean and coarsely chop the broccoli rabe and greens

  2. Bring about 1 inch of lightly salted water to a boil in a heavy saucepan. Add the vegetables and cook until it is tender and only a few tablespoons of liquid are left in the bottom of the pan-about 5 to 10 minutes, depending on how finely the vegetable is chopped.

  3. Set the pan of vegetables aside, but keep it warm.

  4. In a separate skillet or sauté pan, gently sauté the garlic in the olive oil until it is soft, then add mushrooms and cook until browned.

  5. Add the red pepper and yeast flakes and stir to mix well.

  6. Turn the garlic-pepper oil into the broccoli rabe and mix.

  7. Cook the pasta in lightly salted boiling water until done. Drain the pasta and immediately combine with the seasoned greens. Turn it into a warm serving bowl, add pepper, and serve immediately.
