Recipe Ingredients for AUSTIN Eggplant, Creole Style

1 tbsp canola oil
1 medium onion, diced
1/2 bell pepper, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 lb. eggplant, diced into 1/2-inch cubes
1 bell pepper, cut into large pieces
15 ounce diced tomatoes
2 tbsp. tomato paste
1 cup vegetable broth
2 tbsp. minced parsley
1 tsp. dried thyme
1/2 tsp. hot sauce
1/8 tsp. red pepper (to taste)
1/8 tsp. white pepper
1/4 tsp. celery seed
1 freshly ground pepper
1/2 tsp. sugar
1 salt, to taste
1/2 tbsp canola oil
8 oz tempeh

Recipe Directions for AUSTIN Eggplant, Creole Style

  1. Cook rice.

  2. Heat 1 tbsp oil in large skillet. Sauté onion, bell pepper, celery, and garlic over medium heat for about 3 minutes, adding water if necessary to prevent sticking. Add eggplant and rest of bell pepper and sauté for 5 more minutes.

  3. Add remaining ingredients, reduce heat, and cook until eggplant is completely tender, about 20-30 minutes.

  4. While the eggplant is simmering, heat remaining 1/2 tbsp oil in skillet and saute the tempeh with soy sauce.

  5. Serve eggplant with tempeh over rice, garnished with additional parsley or cilantro.
