Ukranian borscht wtih beef and pickled beets

Recipe Ingredients for Aunt Nena's Borscht

14 oz Pickled Beets
2 medium Turnips
1 1/2 tbsp Parsley, Dried
4 tsp Seasoned Salt
8 oz raw Beef Stew Meat
1 piece, cooked, excluding refuse Beef, Shank Crosscuts
8 cup Fat Free Beef Flavored Broth
1 tbsp Butter
5 sprigs Dill Weed, Fresh
3 medium Carrots
3 stalk, medium (7-1/2" - 8" long) Celery
3 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
1/2 medium (2-1/2" dia) Onions
21 grams Wheat Flour, White, All-purpose, Enriched, Bleached
14 oz Tomato Sauce
1 tbsp Butter

Recipe Directions for Aunt Nena's Borscht

  1. Melt 1 tbsp butter in stock pot. Add beef and seasonings. Brown.

  2. Peel, chop or cube, and add the following vegetables to the pot: turnips, carrots, celery and potatoes. Stir until browned.

  3. Add beef broth and bring to a boil. Stir in tomato sauce, beet juice and cubed or sliced beets. Let simmer 15 minutes.

  4. Chop and add cabbage to pot.

  5. Make a roux by melting 1 tbsp butter in a fry pan, then add 1/2 chopped onion and brown. Stir in 1.5 tsp flour plus 1/2 cup of broth from stock pot to make a thick gravy. Add to pot.

  6. Simmer 15 minutes.

  7. Serving suggestion: Top borscht with sour cream, dill, and green onions, and add a slice of marble rye bread on the side.
