This is one of my favorite meals and I always make enough for left overs. It's even better with some cheese sprinkled on top when served! Enjoy!

Recipe Ingredients for Aunt Nancy's Italian Wedding Soup

6 links of Sausage, Italian, Sweet, Links
1 large Onion
4 cloves of Garlic
6 cups of Beef Broth
1/2 cup of Red Wine
1 large Zucchini
3 medium Carrots
2 cups Tomatoes
12 oz Baby Spinach
1 tbsp olive oil

Recipe Directions for Aunt Nancy's Italian Wedding Soup

  1. Saute sausage (remove casing) in a large pot until completely cooked.

  2. Remove from heat and place sausage in another container. Drain off all but 1 tbsp of fat from the original pot and place back on heat.

  3. Add chopped onions and thinly sliced garlic to pot along with 1 tbsp of olive oil, extra virgin if you like.

  4. Let this sweat for about 5 minutes until aromatic.

  5. Put the sausage back into the pot and add all of the remaining ingredients stirring to a boil.

  6. Turn the heat down and allow to simmer for 45 minutes.

  7. Done!

  8. You can add Tortellini at the end and let it cook for another 10 minutes but my husband and I don't really like it. We usually put some Parmesan cheese on top and eat as is! It smells lovely while it's cooking :)
