This is a recipe from Dad's brother Dick's wife. The mixture will keep in the refrigerator up to 6 weeks, which is great if you are planning a brunch - this is one thing you can do well ahead. Grandpa W eats about as many of these as I can give him.

Recipe Ingredients for Aunt Mary Woodruff's Bran Muffins

16 ounces bran flakes
1 quart buttermilk
1 cup vegetable oil
1/4 c. water
4 eggs
3 cups sugar
5 tsp baking soda
3 1/2 cups flour
2 tsp salt

Recipe Directions for Aunt Mary Woodruff's Bran Muffins

  1. Preheat oven to 400 degrees.

  2. Beat the eggs.

  3. Combine bran flakes with eggs, buttermilk, oil, and water. Allow to stand for ten minutes while you measure the dry ingredients.

  4. Mix the dry ingredients into the bran flake mixture till just combined. Don't over-mix.

  5. Spray muffin tin with baking oil spray (like Pam). Fill muffin pan cups full - not overflowing, not 3/4. To get a nice crown, only oil halfway up the side of each cup.

  6. Bake 18-20 minutes.
