Boneless skinless chicken breast cubes roast with vegetables.

Recipe Ingredients for Aunt Leanne's Beautiful Chicken

1 1/4 lb boneless skinless chicken breast
3 T flour
1 t paprika
1/2 t onion salt
1/2 t ground black pepper
3 T extra virgin olive oil
1 lb potatoes
1/2 lb carrots
1/4 c chopped sweet onion
8 oz fat free low sodium chicken broth
1/4 c lemon juice
1 t oregano
1 t basil leaves

Recipe Directions for Aunt Leanne's Beautiful Chicken

  1. Preheat oven to 350F

  2. Chop all vegetables

  3. Cube chicken

  4. Combine flour, paprika, salt, and pepper in a ziplock bag and coat the chicken pieces

  5. Heat olive oil in a large skillet

  6. Add chicken pieces to oil and cook only long enough to brown

  7. Remove chicken from skillet and set aside

  8. Cook vegetables in remaining oil for 5-7 minutes

  9. Add chicken back to pan along with all remaining ingredients.

  10. Cook in oven for 20 minutes covered, and an additional 15 minutes uncovered.**

  11. **If skillet/pan isn't oven safe transfer to shallow baking dish
