Lemon salad on graham cracker crumbs.

Recipe Ingredients for Aunt Josie's Lemon Salad

6 oz lemon gelatin
3 1/2 cups evaporated milk
1 1/2 cups sugar
1/4 tsp. salt
1 1/2 tsp. lemon peel
2/3 cup lemon juice
4 cups graham cracker crumbs
2/3 cup margarine

Recipe Directions for Aunt Josie's Lemon Salad

  1. Dissolve jello, sugar and salt in 4 cups boiling water.

  2. Stir in lemon peel and lemon juice.

  3. Chill until very thick.

  4. Whip in chilled milk until fluffy.

  5. Mix crumbs and butter.

  6. Press into two 9x13 inch pans, save out 1/3 cup crumbs.

  7. Pour lemon mixture over top.

  8. Sprinkle remaining crumbs over top.

  9. Refrigerate.
