Recipe Ingredients for Aunt Grace's Zucchini Casserole

6 cups diced zucchini or summer squash
1 cup mayonnaise
1 clove garlic, mashed
1 Salt to taste
1 Pepper to taste
1 cup grated swiss cheese
6 slices light bread

Recipe Directions for Aunt Grace's Zucchini Casserole

Mix squash with salt, pepper and garlic. Stir in mayonnaise (use light mayo to really reduce the fat and calorie content). Spray casserole dish with non-stick cooking spray and put squash mixture in. Top with cheese and bread crumbs. Bake at 350 for 40 to 45 minutes or until brown and bubbly. Serve hot.
