NOTE: This recipe is from a restaurant in Smyrna, Georgia called Aunt Fannieā??s Cabin. Aunt Fannie was a freed slave of an old Georgia family who remained with the family until her death. The menu at the Cabin represented many of the dishes that Aunt Fannie prepared for the family.

Recipe Ingredients for Aunt Fanny's Yellow Squash Casserole

6 lb squash
1 c onion
1/2 c butter
4 eggs
1 c bread crumbs
1 1/2 tsp salt
1 tsp pepper
2 tsp sugar

Recipe Directions for Aunt Fanny's Yellow Squash Casserole

  1. Preheat oven to 375°F.

  2. Wash squash, cut in half lengthwise, then in 1/4-inch slices.

  3. Combine with chopped onion and cook in water to barely cover until both are tender.

  4. Drain thoroughly, shake out excess water

  5. Mix with half the butter, the bread crumbs, eggs, sugar, salt and pepper.

  6. Pour into greased (PAM) casserole dish.

  7. Pour remaining butter on top and sprinkle with additional bread crumbs.

  8. Bake for 45-60 minutes, or until top is golden brown and bubbly.
