This recipe is from a slave named Fanny who worked on the Campbell plantation in Smyrna, Ga. It's a good Thanksgiving make ahead and freeze dish. Add topping when ready to bake.

Recipe Ingredients for Aunt Fanny?s Baked Squash

1 1/2 lbs. squash, yellow summer
1/4 cup chopped onion
1/4 cup bread crumbs
1/4 tsp Italian seasoning
1/4 tsp. Black pepper
1/2 tsp. dill
1 eggs
1/2 stick margarine
1 1/2 tbsp. Sugar

Recipe Directions for Aunt Fanny?s Baked Squash

  1. Wash and cut up squash. Boil squash and onion together until tender, drain thoroughly, then mash. Add all ingredients except of the butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake in 375 oven for approximately one hour or until brown on top.
