I got this recipe from the Fannie Farmer cookbook but made some tweaks. Used rice flour instead of wheat, and I also eliminated a tablespoon of oil.

Recipe Ingredients for Augmented FannieFarmer's Gluten-free Waffles

2 eggs
1 cup skim milk
2 tablespoons vegetable oil
1 1/2 cups rice flour
2 teaspoons baking powder
2 teaspoons sugar
2 teaspoons salt

Recipe Directions for Augmented FannieFarmer's Gluten-free Waffles

  1. Heat waffle iron; spray with non-stick spray if necessary.

  2. Beat eggs well, add skim milk, vegetable oil and mix.

  3. Stir in rice flour (regular flour can be used as well), baking powder, sugar and salt.

  4. Mix until blended.

  5. Pour just enough batter to fill (usually about 1/4 cup, depends on iron)

  6. Close lid and bake until steam stops or until golden brown.

  7. Cinnamon, vanilla, apples, blueberries and other fruit can be added to liking. Add them before mixing is complete.
