Recipe Ingredients for Audrey's Tamale Pie

1 pound hamburger (85% lean)
1 medium onion, chopped
1 medium green pepper, chopped
2 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon oregano
1 teaspoon cumin, ground
1/8 teaspoon cayenne
28 ounce tomatoes, no salt added, diced
1 cups tomato sauce
1/2 cup black olives, chopped
1 cup frozen corn
1 cup yellow cornmeal
1/2 cups Cheddar Cheese, shredded

Recipe Directions for Audrey's Tamale Pie

  1. Preheat oven to 375 degrees. In a large skillet, cook hamburger, onion, bell pepper, and garlic over medium heat, stirring often, until meat is no longer pink (about 5 minutes). Add chili powder, salt, oregano, cumin, and cayenne. Cook, stirring, one minute. Add tomatoes, tomato sauce, olives, and corn. Bring to a boil, reduce heat, and simmer until thickened, 15-20 minutes. Spread filling evenly in a lightly oiled 9 X 13 baking dish.

  2. In a medium saucepan, bring 2 cups water and a pinch of salt to a boil. Gradually whisk in cornmeal; reduce heat to low, and cook, whisking constantly, until smooth and thick, about one minute. Spread warm cornmeal evenly over the filling.

  3. Bake 30 minutes. Sprinkle cheddar cheese over the top and continue baking until topping is set and golden brown, about 10 minutes longer.
