1 small diced onion 2 small diced zucchini squash 1 medium diced eggplant(skin on) 1 med diced tomato 1-2 garlic gloves minced 1 red or green bell pepper diced 1/4 cup coconut oil (Or olive oil) 1/4 cup parmesan cheese salt and pepper to taste serve w brown rice For more color you can also add a diced green pepper and a diced yellow squash! serves

Recipe Ingredients for Audrey's Ratatouille

1 small Onions
2 cup, sliced Squash, Summer, Zucchini, Includes Skin
3 cup (1" cubes)(99 g) Eggplant
1 cup, chopped Peppers, Sweet, Red
2 clove Garlic
4 tbsp Coconut Oil
4 tbsp Parmesan, Shredded Cheese
2 serving Coarse Kosher Salt
1 cup Rice, Brown, Long-grain, Cooked

Recipe Directions for Audrey's Ratatouille

  1. Set a large saute pan over medium heat and add coconut oil.

  2. Once hot add onions and garlic, cook until onions are wilted or for about 5mins.

  3. Add eggplant and cook for another 5mins.

  4. Add pepper(s), and zucchinis cook for another 5mins

  5. Add tomatoes and freshly ground salt and pepper cook another 5min or until all veggie are cooked through.

  6. Add parmesan cheese to top serve hot or at room temp.

  7. Serve with rice
