Use very ripe bananas, fresh or frozen to make a great snack or desert bread. This bread travels well for lunch.

Recipe Ingredients for Audrey's Banana Bread

1/2 cup cooking oil
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon Baking soda
1/2 teaspoon Baking powder
1/2 teaspoon Salt
3 tablespoons Milk
1/2 teaspoon vanilla extract
1/2 cup chopped nuts (optional)

Recipe Directions for Audrey's Banana Bread

  1. Preheat oven to 350 degrees.

  2. Beat oil and sugar together. Add eggs and banana pulp and beat well. Add sifted dry ingredients, milk and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pan (9 X 5 X 3 inches). Bake in preheated oven (350 degrees) for about 1 hour. Cool well and store overnight before cutting, if no one gets to it before then! Wrap in foil to keep fresh.
