Aubergines baked in tomato sauce, large portions

Recipe Ingredients for Aubergines baked in tomato sauce

2 eggplants, medium
2 cups breadcrumbs, brown
2 eggs
2 tbsp water
1000 g chopped tomatoes

Recipe Directions for Aubergines baked in tomato sauce

  1. peel aubergines and slice into 1/2 inch rounds

  2. mix eggs with water

  3. dip aubergine slices in egg mix and then in breadcrumbs

  4. put slices on a baking tray

  5. bake for 30 mins on 180

  6. put 1/2 tomatoes on bottom of dish

  7. layer aubergines on top

  8. put remainder of tomatoes on top of aubergines

  9. sprinkle small amount of grated cheese on top if you wish

  10. bake for 45 mins on 180 (30 mins covered)
