A meat and pasta free, low calorie ?Lasagne? I usually make my own tomato sauce but this time I used a prepared one with 93 calories per 100 grams, I am showing 1600 grams of sauce here to get the calorie count correct, you actually just use one can or jar! Also I always use sliced mozzarella it?s easier to layer and use evenly through the dish. I use a small Lasagne dish to make this.

Recipe Ingredients for Aubergine and Zucchini Bake

218 grams Aubergine
390 grams Zucchini
200 grams Mozzarella
1600 grams tomato sauce
2 grams dried herbs

Recipe Directions for Aubergine and Zucchini Bake

  1. Slice the Zucchini length ways quite thinly (we get large zucchini in Spain you may need more than one)

  2. Slice the Aubergine thinly length ways

  3. Griddle the vegetables until nicely coloured and par cooked

  4. Spoon a little tomato sauce into the bottom of the pan and sprinkle with some basil and oregano.

  5. Next a layer of Aubergine and a layer of Zucchini, followed by a little more sauce, herbs and topped with half the sliced Mozzarella

  6. Repeat to give a second layer of vegetables, using all the remaining sauce and herbs and finish with the remaining cheese.

  7. Pop in to a pre warmed oven at 180c, approximately 30 minutes or until cheese is bubbling brown

  8. Serve with a crispy green salad and crusty Ciabatta (depending on your regime)
