Makes 4 servings



1/2 WW point per serving. Lovely salad oor dip - add 1 tomato or 1/2 clove garlic to variate taste. It is very good with 1 tbsp of mayonnaise in stead of the 1 tsp of oil but you'll have to calculate your points accordingly.

Recipe Ingredients for Aubergine Salad

400 g aubergine
30 g red onion
1 tsp walnut oil
1/2 tsp salt
1/2 tsp lemon juice

Recipe Directions for Aubergine Salad

  1. Grill the aubergine under the 100% grill on each side in the oven or on the barbecue directly on the flames.

  2. When ready peal the black skin off and leave to cool and drain.

  3. When cold, drain the juice and chop very small - to get a paste. Mix with the salt, oil, lemon juice, onion and garlic cut into very fine chunks.

  4. Enjoy
