Recipe Ingredients for Aubergine, Mushroom, Sweet Pepper Ciabatta Roll

75 grams Rolls Ciabatta Bread
1 Small Aubergine
1 Mushroom Mushrooms
2 tsp Oil Sunflower 100% Pure
1 tsp Garlic Powder
1 cup, chopped Peppers, Sweet, Red
3 slice Deli Style Sliced Mozzarella Cheese
10 grams Oregano
6 leaves Basil, Fresh
1 cup Organic Cherry Tomatoes
1 tbsp chopped Onions

Recipe Directions for Aubergine, Mushroom, Sweet Pepper Ciabatta Roll

  1. Pre heat grill to a moderate heat, lightly brush a large pan with oil. Place red peppers, aubergine slices, mushrooms and red onions in pan and brush with remaining oil.

  2. Season vegetables with oregano, garlic powder, pinch of salt and pepper.

  3. Grill turning vegetables and cook each side for 6 mins.

  4. Split Ciabatta rolls place a mozzarella slice on one half and grill until golden brown.

  5. Layer vegetables inside the roll and garnish with fresh basil.

  6. Can be eaten hot or cold.
