Recipe Ingredients for Aubergine casserole

1 large eggplant
2 oz margarine
1 large onion
1 lb mushrooms
6 zucchini
14 oz chopped tomatoes
1 tsp oregano
4 tbsp parmesan

Recipe Directions for Aubergine casserole

  1. Preheat oven to 180c and lightly oil a casserole dish. Peel and cube the aubergine, then cover it with boiling water and simmer for 10mins. Drain well.

  2. Melt the butter in a frying pan and sauté the onion and garlic for 4-5mins until soft. Add the mushrooms, courgettes and aubergine and continue to cook for 10mins, stirring often.

  3. Mix the tomatoes, salt, pepper and oregano together in a small saucepan and simmer gently for 10mins.

  4. Spoon some of the tomato sauce into the casserole dish. Then place on top a layer of aubergine and mushroom mixture, followed by another layer of tomato sauce, and so on until both mixtures are used up. Sprinkle the top with parmesan and breadcrumbs, cover and bake for 40mins, removing the lid for the last 10mins to brown the top lightly.
