Recipe Ingredients for aubergine bake

15 grams Unico Sunflower Oil
3 carrot (7-1/2") Carrots
400 grams Beef
1 cup(240 g) Whole Milk
1 1/2 cup Tomatoes Diced
180 grams Aubergine
1 tsp Cinnamon, Ground
1 tsp Cumin Seed
1 tsp Coriander Leaf, Dried

Recipe Directions for aubergine bake

  1. pan fry carrots in oil

  2. add mince and brown all over

  3. add milk and simmer until nearly evaporated

  4. add tomatoes, herbs and spices and boil for 20 mins

  5. in the meantime cut the aubergine lengthways, brush with oil and bake for the same amount of time

  6. layer mince and aubergine in a baking dish and bake for 10 mins
