1 onion, chopped
1 clove garlic, minced
1 pinch of salt
1 pinch of pepper
1 tbsp sugar

  1. steam or boil eggplant until fork tender

  2. using a fork, run it along the eggplant to get strips of the eggplant

  3. add all remaining ingredients

  4. chill or serve immediately
