This is an Atkins friendly muffin with only 2.7 NC's each.

Recipe Ingredients for Atkins Friendly Banana Muffins

1 cups Almond meal
1 cup flax meal
1/2 tsp. salt
1/2 tsp. baking soda
3 eggs
1 tbsp. honey
1/2 tsp. Apple cider vinegar
1/2 cup walnuts, chopped
1 tbsp. cinnamon
1/4 cup olive oil
1 tbsp. banana extract

Recipe Directions for Atkins Friendly Banana Muffins

  1. In large bowle, combine almond meal, flax, salt, baking soda and cinnamon.

  2. In medium bowl, whisk eggs, add honey, vinegar, olive oil, banana extract, and walnuts.

  3. Stir wet ingredients into dry.

  4. Place into well greased muffin pans.

  5. Bake at 350 for 30-35 minutes on bottom rack of oven; until toothpick comes out clean.

  6. Makes 12 muffins.
