Recipe Ingredients for ATKINS - Cheesey Eggplant Dip / Sauce (8g Carbs / 4g Net carbs)

225 g eggplant
91 g avacado
1 tsp lemon juice
1 tbsp butter
3 cloves garlic
1 small onion
2 tbsp parmesan cheese

Recipe Directions for ATKINS - Cheesey Eggplant Dip / Sauce (8g Carbs / 4g Net carbs)

  1. Roast eggplant and garlic, skins on, for 30 mins at 400.

  2. Chop onion and sautee in a pan with butter or olive oil until translucent.

  3. Now scoop out the avacado and mash that in a bowl with some lemon juice or vinegar, add the onion, salt and pepper to taste and parmesan cheese.

  4. Cut open eggplant and scoop insides into a bowl, mashing with a fork. Squeeze garlic out of its skin and mash that in there too.

  5. Allow to sit refridgerated for an hour before eating to blend the flavours!
