Atkins egg frittata with mushrooms, veggies, cheese & bacon bits

Recipe Ingredients for Atkins Breakfast Frittata

1 large Egg, Whole
1 serving Sour Cream Grade A Pasteurized Dairy
1/2 serving Cream Spread Cheese
1 oz Cheese
1/4 cup, pieces or slices Mushrooms
1/2 cup Steam'ables Harvest Vegetables
1/2 serving Real Bacon Pieces
1/4 cup (8 fl oz) Water
1 tbs great value virgin olive oil

Recipe Directions for Atkins Breakfast Frittata

  1. Make as a single frittata/omlette or multiply by 6 for breakfast casserole. Add hot sauce, veggies & seasoning as needed.

  2. Saute mushrooms & veggies in olive oil.

  3. Mix egg, sour cream & water, then pour over veggies in pan.

  4. Add cream cheese, cheese & bacon pieces to top, then cover and simmer.

  5. Flip over for omlette or serve as frittata.

  6. For casserole, grease dish with olive oil, add egg mixture, then add other ingredients to top.

  7. Cook casserole at moderate temperature for about 20 minutes or until egg is cooked.
