Delicious and easy egg casserole. Great side for breakfast or dinner.

Recipe Ingredients for Asparagus & Zucchini Egg Casserole

1 cup asparagus, cut
1/2 cup zucchini, chopped
1 tbsp onion, minced
1 tsp olive oil
4 eggs
1/2 cup milk
1/4 tsp salt
3 tbsp parmesan cheese, grated
1/2 cup mozzarella cheese, shredded

Recipe Directions for Asparagus & Zucchini Egg Casserole

  1. Preheat overn to 350.

  2. Saute asparagus, zucchini and onion in 1 tsp olive oil for 5 minutes.

  3. Spray 1 qt casserole dish with non-stick spray.

  4. Mix egg, milk and 2 tbsp parmesan cheese.

  5. Spread vegetable mixture evenly into pan and top with 1/4 cup mozzarella cheese.

  6. Pour egg mixture over.

  7. Bake in oven 25 minutes or until knife comes out clean.

  8. Sprinkle remaining parmesan and mozzarella cheese on top.

  9. Bake for 5 more minutes.
