Asparagus & Wild Rice Casserole

Recipe Ingredients for Asparagus & Wild Rice Casserole

2 tbsp chopped onion
1 tbsp butter
1 tbsp flour
1/8 tsp salt
1 cup milk
1 cup sour cream
2 cups cooked wild rice
2 lbs fresh asparagus, cut into 2-inch pieces and cooked
1 cup shredded cheddar cheese
6 bacon, diced and cooked

Recipe Directions for Asparagus & Wild Rice Casserole

  1. In a small saucepan, sautC) onion in butter until tender. Stir in flour and salt until blended. Gradually stir in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; cool fro one minute. Stir in sour cream until smooth.

  2. In a greased 11-inch x 7-inch x 2-inch baking dish, layer the wild rice, asparagus, sour cream mixture, cheese and bacon. Bake, uncovered, for 30 minutes or until heated through.
