Asparagus and turkey bacon fritatta

Recipe Ingredients for Asparagus and turkey bacon fritatta

2 cups egg beaters
1 cup soy milk
1 tbsp flour
1 pound asparagus
6 slices turkey bacon
1 pinch nutmeg
4 ounces red onion
2 ounces pepperjack

Recipe Directions for Asparagus and turkey bacon fritatta

  1. Preheat oven to 350

  2. Combine egg beaters, soy milk, flour, nutmeg, salt and pepper.

  3. Cook bacon, spread onion, asparagus and bacon on the bottom of a saute pan and cook over low heat.

  4. Pour egg mixture over vegetables, cook until eggs are set around the edges. Place in oven to finish, top with cheese and broil
