New recipe I found - hope it's good! Gonna try it tomorrow. I removed sun dried tomatoes and roasted cashews from the recipe to cut back on fat.

Recipe Ingredients for Asparagus and Tofu with Quinoa

1 teaspoon olive oil
2 teaspoons garlic, finely chopped
1 c finely chopped red onion
16 oz vegetable stock
2 tablespoons lemon juice
1 cup uncooked quinoa, rinsed
1/2 teaspoon pepper
1/2 pound extra-firm tofu, cut into 1/2-inch pieces
1 pound asparagus, trimmed and cut into 1 1/2-inch pieces

Recipe Directions for Asparagus and Tofu with Quinoa

  1. Heat oil in a medium pot over medium heat.

  2. Add garlic and onions and cook for 2 minutes.

  3. Add stock, lemon juice, quinoa, pepper and tofu.

  4. Cover and simmer for 15 minutes.

  5. Arrange asparagus on top of quinoa mixture, cover and continue cooking for 5 more minutes.

  6. Stir gently to combine.
