Recipe Ingredients for Asparagus and Swiss Impossible Pie

1 (15 onces) Asparagus spears
1 cup shredded Swiss cheese (4 oz/125 g)
2 green onions, sliced
4 eggs
2 cups milk
1 cup biscuit mix

Recipe Directions for Asparagus and Swiss Impossible Pie

  1. PREHEAT oven to 400°F. Grease deep dish pie plate.

  2. SELECT 6 asparagus tips for garnish. Cut off bottoms leaving 4-inches (10 cm) of stalk with tip. Set aside.

  3. - 1 jar (12 fl oz/341 mL) Del MonteŽ Fresh Cut Asparagus Spears, drained

  4. CHOP remaining asparagus, including the 6 bottoms.

  5. SPRINKLE asparagus, cheese and onions in pie plate, distributing evenly.

  6. BEAT eggs, milk and variety baking mix in blender for 15 seconds, or with hand beater for 1 minute. Pour over asparagus mixture.

  7. ARRANGE reserved asparagus tips over top, forming a spoke design.

  8. BAKE 35 to 40 minutes, or until golden brown and set. Cool 5 minutes before cutting.

  9. TIP: If desired, add diced cooked or smoked ham to pie before pouring in the egg mixture.
