Asparagus & Spinach Soup Recipe

Creamy soup thickened by asparagus and roux. Spinach is for color.

Recipe Ingredients for Asparagus & Spinach soup

1 1/2 lb Asparagus
1/2 green bell pepper
2 cloves garlic
2 T olive oil
1 t olive oil
2 T butter
2 oz flour
14 oz low sodium chicken broth
1 T white wine
2 t lemon juice
1 c spinach
4 cups water
1 pinch cayenne pepper
1 t dried thyme
1 pinch salt
1 pinch black pepper

Recipe Directions for Asparagus & Spinach soup

  1. Reserve some tips of asparagus for garnish.

  2. Peel the thicker portions of the stem which may be woody.

  3. In a stock pot or large dutch oven, sweat garlic and bell pepper in 1t olive oil.

  4. Add chicken broth and water and bring to a boil.

  5. Add asparagus (Sans reserved tips) and reduce to a simmer. Add Thyme, black pepper, and cayenne pepper.

  6. Add the asparagus tips to a steamer basket or a small colander, then immerse in the boiling broth until the tips turn bright green. Quickly dunk them in an ice bath or run them under cold water to stop the cooking. Set aside.

  7. Continue to cook the remaining asparagus until very tender, ~15 minutes.

  8. While this is cooking, melt butter in the 2T olive oil in a saucepan or saute pan. Whisk in the flour. Cook over medium high heat until the roux darkens slightly. Set aside.

  9. Blend the soup with a stick blender or in batches in a food processor or bar blender.

  10. Add white wine and lemon juice.

  11. Add roux to soup, then bring back to a simmer. Cook until the soup thickens slightly.

  12. Serve with the reserved asparagus tips.
