Greek style veggie omelet with feta.

Recipe Ingredients for Asparagus Spinach Omelet

2 T water
1/3 cup fresh asparagus
1/4 cup onion, chopped
1/2 cup fresh spinach
1 t olive oil
2 cloves garlic, crushed
2 T tomatoes, chopped
3 egg whites
1 salt
1 pepper
1/2 oz feta

Recipe Directions for Asparagus Spinach Omelet

  1. Place 2 T water in a small skillet and bring to slow boil, add asparagus.Toss one minute until asparagus turn bright green, add onions and toss until they begin to turn transparent. Add spinach and turn until it slightly wilts.

  2. Add olive oil and garlic. Saute until fragrant.

  3. Add egg whites, lifting veggies to allow the egg to go under veggies. Sprinkle salt and pepper.

  4. Top with tomatoes and feta, fold to allow cheese to melt. Serve.
