Recipe Ingredients for Asparagus Soup, Victoria's without cream

20 spears Asparagus
1 medium Onion
2 cloves Garlic
2 stalks Celery
1 cup Chicken Broth or Vegetable Broth, low sodium if preferred
1 tablespoon olive oil, optional
1 Salt to taste
1 Pepper to taste

Recipe Directions for Asparagus Soup, Victoria's without cream

  1. Wash asparagus thoroughly & trim only white ends. Mince onions, celery and garlic.

  2. Saute asparagus in +-1/2 cup water until al dente (reserving 8 floret tips for garnish). Save the water for the soup.

  3. Saute onions, celery and garlic in olive oil and when almost finished add +-1 cup stock, continue to cook until onions are clear.

  4. Puree in blender asparagus, tough ends first, with a little stock or asparagus water. Add all the other ingredients (reserve a few asparagus florets), including salt and pepper to taste, and blend on high for several minutes. Dish and place a few asparagus florets for garnish.

  5. As a side dish around the soup; roll basil leaves around cherry tomatoes and goat cheese or feta spread on basil leaf.
