Low-cal, great tasting thick soup. Easy to make vegetarian by using vegetable broth. Made with 2% milk instead of cream, and 25% more vegetable than original recipe.

Recipe Ingredients for Asparagus Soup

900 grams Asparagus
1 1/2 cup Soup, Chicken Broth
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1/4 tsp Nutmeg, Ground
1 tbsp Butter
15 grams Wheat Flour, White, All-purpose, Enriched, Unbleached
3 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for Asparagus Soup

  1. Cook the asparagus. If desired, reserve and set aside some tips for a garnish at the end.

  2. Puree the asparagus with 3/4 cup broth.

  3. Melt butter and then add flour to make the roux. Add seasonings and then the milk (or cream) all at once.

  4. Cook till thickened and bubbly, then one minute more.

  5. Add asparagus and all remaining broth to pot, bring to temperature and salt and pepper to taste.
