Asparagus soup. Very yummy and filling.

Recipe Ingredients for Asparagus soup

32 oz Asparagus
2 leek Leeks, (Bulb And Lower Leaf-portion)
5 medium (4-1/8" long) Onions, Spring Or Scallions
2 oz Extra Virgin Olive Oil from Tuscany
12 oz Spinach
2 tbsp Spreadable Butter with Canola Oil
4 cup Organic Vegetable Cooking Stock

Recipe Directions for Asparagus soup

break 2 pounds of asparagus into 2 inch pieces, slice leeks thinly (wash well after cutting), slice onion thinly, put all in dutch oven, drizzle with olive oil and bake at 400 for 40 minutes. Saute spinach with unsalted butter. When vegetables are done baking, add all into blender and blend until smooth. Salt to taste.
