Asparagus Soup Recipe

The combination of lowfat milk, a little butter and potatoes replaces heavy cream in this recipe.

Recipe Ingredients for Asparagus soup

2 lb Asparagus, chopped
1 med onion, chopped
2 stalks celery, chopped
1 small carrot, diced fine.
1 T Garlic, chopped
3 medium potatoes, peeled and chopped
1 c white wine
4 c chicken broth or stock
1 T vegetable oil
2 T butter
1 t dried Thyme leaves
1 c 1% milk
1/4 t white pepper
1/2 c Light sour cream

Recipe Directions for Asparagus soup

  1. In a large saucepan or small stockpot; sauté onion, [carrot] and celery in vegetable oil 2 min. Add garlic, sauté 2 min more. Add wine, bring to a boil.

  2. Add broth, asparagus, potatoes and boil for 30 minutes. Remove and let cool a little.

  3. In batches, carefully puree in blender then push soup through a fine sieve.

  4. Return to pan and add milk, chopped asparagus tips, thyme and butter. Bring back to a boil then simmer for 5 minutes. Season with salt and white pepper.

  5. Serve with a dollop of light sour cream
