Tasty asparagus soup, using the usually discarded ends of the asparagus.

Recipe Ingredients for Asparagus Soup

1 cup asparagus, chopped
1/10 cup onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1/10 cup sweet pepper, red, chopped
1/4 chili pepper, jalepeno, chopped
2 cups water
1 pinch salt
1 pinch pepper
1 tsp olive oil

Recipe Directions for Asparagus Soup

  1. Saute onion, jalepeno & sweet red pepper in olive oil. Add salt to bring out the sweetness & moisture.

  2. Add celery to saute.

  3. Snap asparagus and keep the tips for later use. Cut the very ends off & discard. Slice or chop the rest and add to crock pot.

  4. Add water to soften the asparagus.

  5. Add carrots & more water if necessary.

  6. Cook in crockpot on high for about an hour or two.

  7. Reduce heat so water doesn't all boil away.
