Recipe Ingredients for Asparagus Soup

12 oz asparagus
1 1/4 pints boiling water
5 grams marigold bouillon - swiss vegetable, powder
2 oz Margarine, Non hydrogenated, Low in saturated fat
1 medium onion, chopped finely
3 tablespoons plain flour
1 salt and pepper, season to taste
1/4 teaspoon ground coriander
1 tablespoon lemon juice
16 fl oz skimmed milk

Recipe Directions for Asparagus Soup

  1. Put the asparagus in a saucepan with the stock, bring to the boil, cover and simmer for about 20 minutes until soft, drain and reserve stock.

  2. Melt the margarine in a saucepan, add the onion and fry over a light heat, until soft, but only barely coloured, stir in the flour and cook for 1 minute, then gradually whisk in the reserved stock and bring to the boil.

  3. Simmer for 2-3 minutes, until thickened, then stir in the cooked asparagus, seasoning and coriander and lemon juice. Simmer for 10 minutes, then cool slightly and hand blend until smooth.

  4. Pour back into a saucepan and add the milk and bring to the boil. Then simmer for 2 minutes, stir in some cream if you wish or natural or greek yoghurt and serve.
