Recipe Ingredients for Asparagus & Shitake Mushroom Pasta

1 lb asparagus
12 oz pasta
1 lb shitake mushrooms
1 3/4 c vegetable broth
6 T lemon juice
1 T lemon zest
1 c sliced shallots
2 T butter

Recipe Directions for Asparagus & Shitake Mushroom Pasta

  1. Boil pasta according to package directions.

  2. Meanwhile, melt 2T butter and add shallots, saute for a couple of minutes

  3. Add sliced mushrooms, saute about 6 minutes or until soft.

  4. Add lemon juice, lemon zest and vegetable broth, boil until reduced by half - about 6 minutes.

  5. Add asparagus and cook until bright green, about 2 minutes.

  6. Mix with drained pasta, garnish with fresh snipped dill.
