Asparagus, mushooms, snap peas, and tempeh stir fry served over soba noodles

Recipe Ingredients for Asparagus Shiitake Stir Fry with Tempeh

2 tbsp dark sesame oil
2 tbsp tamari
8 oz tempeh, diced
1 lb asparagus
1/2 lb snap peas
8 oz white mushrooms, sliced
6 2/5 oz soba noodles
1 salt and pepper to taste

Recipe Directions for Asparagus Shiitake Stir Fry with Tempeh

  1. Marinate tempeh in tamari while prepping vegetables. Steam tempeh for 10 minutes.

  2. Saute vegetables in half of the oil for 10 minutes, add tempeh and continue until tempeh is browned. Meanwhile cook noodles, toss with remaining oil and veggies and serve.
