Recipe Ingredients for Asparagus Salad, warm

35 gram red onion, thinly sliced
1 tbs Rice Vinegar
4 oz hot water
320 1 bunch Asparagus
1 1/2 tbs low-sodium Chicken Broth
3 oz Peppers
1/2 tbs Balsamic Vinegar
1/2 tbs extra virgin olive oil
1/8 tsp sea salt
1/4 tsp freshly ground black pepper

Recipe Directions for Asparagus Salad, warm

  1. Slice onion very thin, place into a small bowl with the rice vinegar and hot water, while you prepare the rest of the ingredients. After 10 minutes, drain and squeeze dry.

  2. While onions marinate, heat broth in a stainless skillet. Snap off the bottom of the asparagus (I use 1 bunch, which comes out to 320 gram after snapping off the bottoms). Cut spears into 2"-inch lengths.

  3. When broth begins to steam, add asparagus. Cover, cook for 5 minutes. Thin asparagus will take only 3 minutes.

  4. Combine roasted, sliced peppers, marinated onions, asparagus and vinaigrette. Season with freshly ground black peppers and sea salt. Marinate for 5 more minutes and serve warm. Yum!
