Asparagus Risotto with truffle oil

Recipe Ingredients for Asparagus Risotto with truffle oil

4 cups vegetable broth
2 tablespoon olive oil
4 clove garlic
1 cup arborio rice
1 lb asparagus
2 tablespoons butter
1 tablespoon truffle oil
1/2 cp parmesan cheese

Recipe Directions for Asparagus Risotto with truffle oil

  1. bring broth to boil over med heat

  2. cover and maintain at a simmer

  3. heat oil in pan add garlic and rice and cook for 5 minutes or until rice is golden brown

  4. begin adding broth 1/2 cup at a time and cook stirring constantly for 20 minutes or unti broth becomes all absorbed and risotto is creamy

  5. Just before adding last cup of broth add asparagus, butter and pepper

  6. stir in truffle oil adn cheese
