Italian rice dish with asparagus, white wine and cheese. A very easy method for making risotto.

Recipe Ingredients for Asparagus Risotto

1/2 kg asparagus, peeled, trimmed and cut into one inch long (2.5cm) pieces, tips reserved
5 cups stock
2 tbsp extra virgin olive oil
3 tbsp butter
1/3 medium red onion, diced
1 1/2 cup dry white wine
1 Salt to taste
1/2 cup grated Parmesan cheese

Recipe Directions for Asparagus Risotto

  1. Bring a pot of water to the boil. Add half the asparagus stalks and cook until quite soft, at least 5 minutes. Rise quickly under cold water. Put the cooked asparagus in a blender or food processor and add just enough water to allow machine to puree until smooth: set aside.

  2. Put stock in a medium size saucepan over low heat. Put oil and 1 tablespoon of butter in a large, deep non-stick skillet over medium heat. When it is hot, add onion, stirring occasionally. Each time the stock has just about evaporated, add more.

  3. Add the rice and cook, stirring occasionally, until it is glossy, about two to three minutes. Add the white wine, stir, and let the liquid bubble away. Add the warmed stock, half-cup or so at a time, stirring occasionally. Each time the stock has just about evaporated, add more.

  4. After about 15 minutes, add the remaining asparagus pieces and tips, continuing to add stock when necessary. Five minutes later, begin tasting the rice. You want it to be tender but with a bit of crunch; it could take as long as 30 minutes in total to reach this stage. When it does, stir in half a cup of the asparagus puree. Remove the skillet from the heat, add the remaining butter and stir briskly. Add the Parmesan and stir briskly, then taste and adjust seasoning. The risotto should be slightly soupy. Serve immediately.
