Creamy Italian-style rice with fresh asparagus and carrots

Recipe Ingredients for Asparagus Risotto

1 cup arborio rice
1/2 cup onion
4 cups vegetable broth
1/2 cup parmesan, shredded
1 cup asparagus
1 carrot, shredded

Recipe Directions for Asparagus Risotto

Saute onion in non-stick pan using cooking spray until soft and translucent. Add rice and cook for two minutes. Add 1 cup of broth and simmer rice, stirring frequently until broth is absorbed. Continue adding broth 1 cup at a time cooking until rice is tender and creamy. Add fresh asparagus and carrot, stirring and cooking for approximately 3 minutes until vegetables are tender. Stir in cheese. Serve hot.
