Recipe Ingredients for Asparagus Quinoa Salad

8 spears asparagus
1 1/2 teaspoons Extra Virgin Olive Oil
1 tsp. salt
1 cup quinoa, cooked as directed
1/4 cup olives, pitted and coarsely chopped
1/4 cup chopped sundried tomatoes
2 ounces crumbled feta cheese
1 tablespoon balsamic or red wine vinegar
1 fresh ground pepper to taste

Recipe Directions for Asparagus Quinoa Salad

  1. Preheat the oven to 400F.

  2. Remove the woody ends from the asparagus by gently bending each spear until it breaks--it will naturally snap off at the right place.

  3. Lay on a cookie sheet or baking pan, drizzle with olive oil, sprinkle with a pinch of salt, and toss.

  4. Roast for 10 minutes.

  5. Cool. Chop the asparagus into bite-size pieces.

  6. In a bowl, combine the asparagus, quinoa, olives, sundried tomatoes, cheese, vinegar, and 1 1/2 teaspoons olive oil.

  7. Season with salt and pepper to taste.
