Makes 6 servings



Made without a crust. Bake for approximately 45 minutes at 375 degrees F; sprinkle crisp bacon on top during last five minutes. Use salt sparingly. A very tasty dish. I used light feta cheese.

Recipe Ingredients for Asparagus Quiche

5 large eggs
1 cup 1% fat cottage cheese
1/2 cup feta cheese
1 cup cheddar cheese
8 asparagus spears
1 salt and pepper
1/4 cup water
6 bacon

Recipe Directions for Asparagus Quiche

  1. Fry bacon until crisp, then crumble when cooled.

  2. Cut asparagus into small pieces, then cook in water until tender. Drain, and allow to cool before adding.

  3. Mix together all ingredients, except for bacon. Pour into a pie or quiche pan that has been sprayed with Pam.

  4. Place in preheated 375 degree oven, and bake for 45 minutes (approximately). At 40 minutes, add crumbled bacon to top.
