Makes 2 - 9" pie plates of quiche

Recipe Ingredients for Asparagus Quiche

7 eggs
2 cups flour
1 tsp baking powder
4 cups shredded mozzarella cheese
3 cups asparagus
1 onion
8 oz reduced fat sour cream
1/2 cup soymilk
1 tsp fennel
1 tsp dill
1 tsp celery seed

Recipe Directions for Asparagus Quiche

  1. Spray pie plates with Pam.

  2. Put onion and asparagus in bottom, top with some cheese.

  3. Mix all other ingredients in a bowl.

  4. Pour over veggies.

  5. Push batter to edges of pie plate.

  6. Bake at 400F for 40-45 minutes.
