Recipe Ingredients for Asparagus & Potato Frittata

3 teaspoons canola oil, divided
1 small onion, sliced thin
1 clove of garlic, chopped
1 medium tomato, seeded and chopped
2 small cooked potatoes, sliced
1/2 cup cooked asparagus, cut into 1 inch pieces
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup chopped mushrooms, optional
1/4 cup chopped roasted peppers, optional
4 large eggs
4 large egg whites
1/4 cup grated Parmesan or Gruyere cheese
2 tablespoon chopped chives or scallions

Recipe Directions for Asparagus & Potato Frittata

  1. Preheat broiler on low. Add 2 teaspoons of oil to a ovenproof, nonstidfk skillet over medium heat. Add onion, garlic and 1/2 of tomatoes, cook until onion is limp about 8 minutes.

  2. Add potatoes and cook until they start to brown, about 4 minutes, add asparagus and cook until heated through. Remove all vegetables from pan, season with salt and pepper.

  3. Whisk whole eggs and egg whites, add cheese in a medium bowl. Add the vegetables to the egg mixture and pour into the pan, gently distribute the vegetables. Cook over low heat until underside is light golden 5-8 minutes.

  4. Place pan under broiler (6 inches from flame) until the top of the frittata is puffed and golden brown 1-2 minutes. If still uncooked in center, put into a 350 degree oven for 5-8 minutes. Loosen the frittata and slide onto a platter.

  5. Serve at room temperature. Can be reheated.
