A frittata that can be eaten for breakfast, lunch, or dinner!

Recipe Ingredients for Asparagus, Potato, and Bacon Frittata

8 large Egg, Whole
6 oz Sharp Cheddar
1.25 oz Parmigiano Reggiano Grating Cheese
0.5 medium raw Onion Red
1 cup chopped raw Yukon Gold Potatoes
6 slices COOKED Center Cut Bacon
7 oz Asparagus
3 tbsp Extra Virgin Olive Oil
0.25 serving Cayenne Pepper Spice
2 tsp Salt, Table
2 tbsp Parsley

Recipe Directions for Asparagus, Potato, and Bacon Frittata

  1. Mix Eggs, parmigiano reggiano, salt, pepper, cayenne, and parsley in a bowl and set aside. Make bacon.

  2. Heat 2T EVOO in an oven-safe, nonstick pan and brown the potatoes on all sides, 6-7 min. Remove potatoes into a bowl.

  3. Pour remaining T of EVOO into pan and soften onions. Add garlic and asparagus, cooking until asparagus is bright green.

  4. Pour eggs and potatoes into pan. stir once, then pour cheddar into pan with chopped up bacon. Stir and then let cook for 10-12 min without stirring.

  5. Preheat Broiler; finish frittata 6 in. away from broiler in oven until top is golden brown, 1-3 min.
