Recipe Ingredients for Asparagus Pesto

2/3 pound asparagus
2 cups spinach leaves, washed
2 cloves garlic
3/4 cup freshly grated Parmesan cheese, plus more for topping
1/2 cup pine nuts
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
1/4 teaspoon sea salt

Recipe Directions for Asparagus Pesto

  1. Take off the tough ends of the stalks, and slice crosswise.

  2. Heat up 2 pots of water, one big one, one medium.

  3. Once the water is boiling, cook the stalks in the medium pot for 2 to 3 minutes, then rinse with cold water to stop cooking.

  4. Set aside cooked asparagus.

  5. Toast the pine nuts in a skillet till lightly brown and golden.

  6. Finely shred the parmesan.

  7. Slice several asparagus spears diagonally into 1 inch bits and set aside for garnish.

  8. Put the toasted pine nuts, baby spinach leaves, remaining asparagus and garlic cloves into the food processor.

  9. Process, then add the olive oil.

  10. At the end add the lemon juice and sea salt.
